Bike Bike Bike.
What’d you do this weekend? Me? Oh, no big deal, I just biked 51 miles through northern Michigan. It was pretty awesome. The ride was called Zoo De Mack. There were over 4,000 people on the ride! It was really cool to be around so many people who loved bikes and being active. Plus, it was great riding along the shores of Lake Michigan, practically. We biked from Harbor Springs to Mackinaw City. Then after the ride, we went to Mackinaw Island to hang out. It was my first time there so I enjoyed it.
When you leave your house and eat the way I do, you have to be prepared. Personally, i took advantage of the four hour ride and used it as an excuse to eat my favorite snacks. The picture on the right is what I brought with me.
The trail mix in the top right is pretty much my favorite thing ever. The fruit mixed with cashews and macadamias is amazzzinnnggg. Plus, the nuts aren’t roasted in any funky oils. The only thing I don’t like is that there’s some sugar added to the cranberries but…we can’t all be perfect all the time, I suppose.
The bars on the bottom right I got from a local vendor who makes paleo treats. The top one is Mocha Chip and the other one, as you can kind of see, is Agent Orange, which tasted kind of like carrot cake. They were both pretty good. Had I not been able to get those, I would have just brought Lara Bars.
You went on a vacation and didn’t even eat anything terrible!?!
Admittedly, in addition to those healthier snacks, I kind of ate a lot of junk. I started listing all the things that I ate but this isn’t a food diary so…let’s just say that I had some gluten and fudge. Lots of fudge. I’m okay with it tough, because it was a vacation and I normally don’t eat that stuff. You gotta give yourself a break once in a while.
Back to Normal
When I was at the farmers market last weekend, I picked up some grass-fed short ribs. I don’t know why but lately I’ve been wanting short ribs really badly. I had absolutely no idea how to cook them, but I knew I wanted cooking them to be easy. So I googled “paleo slow cooker short ribs”. Luckily, Google never lets me down and I found this recipe.
It was super easy to whip up the marinade in my magic bullet.
Once I got that ready, I just threw everything in the slow cooker, turned it on, and went to work.
Unfortunately, I ended up having to stay at work three hours later than expected so the ribs were in the slow cooker three hours longer than expected. They didn’t burn or anything, they were just a bit dryer than I would have liked.
Sorry for the dark picture. How were they? OH MY GOODNESS. I want to eat this all day every day. So delicious. If you ever make short ribs, try this recipe. The marinade is delicious. I kind of want to try this marinade on a roast because I think that would be really good too. When it was time for dinner, I just steamed some broccoli and used the juices from the ribs as a gravy on the broccoli and it was SO. GOOD.
